Ubriaco di Raboso cheese is Antonio Carpenedo's first creation among his Formaggi di Cantina cheeses, dating back to 1976, which gave birth to the Ubriaco brand. A success story of more than 40 years in which there has been no end to experimentation and compromise with high quality.
Ubriaco di Raboso is a cow's milk cheese with a rind that takes on a classic wine-red colour, testimony to the careful method of impregnation that transforms the paste into a deep yellow with rare, small eyes.
At the table, it pairs perfectly with polenta, a crusty piece of bread and a medium-bodied red wine. Excellent with Radicchio Rosso di Treviso, a combination from a unique area.
Ubriaco di Raboso cheese offers fruity notes of wild blackberries and sour cherries. The vinous notes are delicate and persistent, wrapped in a delicate but decisive, slightly spicy flavour.

Ingredients: Pasteurised cow's milk, milk enzymes, salt, rennet, preservative: lysozyme (from egg). Wine "Raboso IGT" (min. 0.1%) and crushed grapes (min. 0.1%) in rind.
