Long tomatoes are grown in the open field by iContadini in April and May, and harvested by hand in July and August. They are then washed, sorted, cut by hand, salted and left to rest on drying frames for 4-5 days. This is a natural and traditional technique handed down by iContadini's grandfather. Immediately afterwards, the tomatoes are washed in water and vinegar and ground together with capers from Racale and Mediterranean spices. The resulting paté is then jarred with extra virgin olive oil. To obtain 1 kg of dried tomatoes for the paté, about 10 kg of fresh tomatoes are needed.
