This delicious pesto consists of 57% Bronte's famous pistachios - the "green gold" from Sicily. These are the best pistachios in Italy, which have been puristically processed into a chunky pesto using only extra virgin olive oil and salt. It is particularly delicious with pasta, such as trofie. In Sicily, pistachios are also popular with fish. You can also use it to refine bruschetta. 

STORAGE  
Store in a cool, dry place away from light. Once opened, store in the refrigerator.

PREPARATION
If possible, add olive oil. Stir well before use.

Scyavuru Pesto di Pistacchio - the sun of Sicily in a glass  

Aziende Agricole Scyavuru srl is located in the middle of a lemon grove near Ribera, a small town on the southern coast of Sicily, crossed by three rivers. Scyavuru means perfume, smell, fragrance in the Sicilian dialect. The fruits grown here have DOP status, i.e. a protected designation of origin. The climatic conditions, influenced by Mount Etna, and the fertile soils with lava rock offer simply optimal conditions for fruit growing, but also for the cultivation of pistachios, almonds and nuts. Scyavuru was founded by three sisters who all own their own fruit farm in the third generation. They are united not only by the family bond but also by the passion for farming. Their main goal is to transform what the soil offers, with special attention to the cultivation and harvesting of fruits, carefully preserving the seasonality of nature. They select fresh and genuine ingredients for the preparation of spreadable creams, toppings, sauces, jams and marmalades, paying attention to every single step.
