Provolone Dolce is a semi-hard cheese made from cow's milk and a typical product of the Italian cheese tradition. It originates from southern Italy, but today it is mainly produced in Lombardy and Veneto. Provolone is made using the filata method. It thus belongs to the same cheese family as, for example, mozzarella, scamorza or caciocavallo. 

Provolone originally comes from southern Italy, probably from Lucania and Campania. The first written references to it date back to the Middle Ages. 

The special production technique of pasta filata comes from southern Italy. There, the transport of the milk in the hot temperatures of the region caused the milk to become strongly acidic. This resulted in a very unstable curd during cheese production. During prolonged storage on tables, this tended to acquire a platic consistency and to form "fili" (threads) when the curd was pulled apart. This fact gave rise to the technique of "filatura". This involves leaving the curd to ripen on tables for some time and then pulling and shaping it in hot liquid to the desired consistency (soft for mozzarella to more consistent for provolone/caciocavallo) and shape. 

Ready-ripened provolone comes in different shapes, sizes, weights (from 500 g to over 100 kg) and bindings. The dough is firm, slightly elastic, white to light yellow in colour. It has few, irregular breaking holes and cracks. The taste varies depending on the type: Provolone dolce is mild and creamy. 

Provolone can be served cold on bread or in thin slices as carpaccio with olive oil, salt, pepper and herbs. Provolone has good melting and string-forming properties, which is why it is also often used in hot dishes, like its "family" mozzarella, scamorza or caciocavallo. It is used to flavour starters and main courses and is served with vegetables. Provolone is an element in many sandwiches around the world.
