Semi-hard semi-hard cheese made from cow's milk with small to medium-sized holes. A typical table cheese - with its buttery mild aroma it tastes great with fresh bread or a glass of wine. 44% fat in dry matter - Origin Friuli - Venezia Giulia 

Asiago also Asiago d'Allevo is a north-eastern Italian cheese with a protected designation of origin. 
Taste 
Asiago has a smooth thin elastic rind of yellowish grey colour and a light straw-coloured paste with many small holes. The rather soft cheese tastes pleasantly mildly spicy with a nutty and slightly lemony aroma. Older Asiago is harder and more compact and develops a slightly acidic aroma.

History 
Cheese has been produced on the Asiago plateau for over a thousand years. In the past, the milk was mainly supplied by sheep. The Asagio type has been known since the Middle Ages.
